A nice filling supper dish
Heat a frying pan to a medium heat, add the bacon and fry for a minute or so until the fat starts to melt. Add the carrot and celery, and fry for
a further 2 minutes, then add the onion and tomatoes and fry until the carrot and celery soften (the tomatoes will break down and form a sauce). If you want a bit more sauce add the tablespoon of water.
Stir in the Puy lentils and heat through, and serve.
This recipe is really great with a fried egg on top
