Ingredients
- 300g Self Raising flour
- 400g Caster Sugar
- 50g Cocoa Powder
- 285g Butter, melted
- 135g Beetroot, cooked and grated
- 4 Eggs, beaten
- 125ml Milk
- 2tsp Vanilla Extract
- Filling
- 50g Cream Cheese
- 12tsp Vanilla Extract
- 225g Icing Sugar
Method
The Cake Nest share their recipe for a Valentine’s chocolate cake
• Preheat oven to 180ºC Gas Mark 4 and grease two 7” round cake tins • Combine all the dry cake ingredients together - flour, sugar, cocoa powder • Mix the wet ingredients together - butter, eggs, milk • Place dry and wet ingredients together and mix well • Add the beetroot, stir until evenly distributed • Split mixture between evenly between the two tins and bake for 25-30 minutes • Turn out and allow cool completely before icing • To make the filling, whisk the ingredients together until fluffy • Smooth over the top of one cake and place the other on top • Dust with icing sugar
This cake can be used to make cake pops, rather than a traditional shaped cake, as in the image below.
