Rhubarb cake recipe

Ingredients
8oz self raising flour
1/2 tsp bicarb of soda
3oz butter
12oz sugar
1 lb rhubarb
2 eggs
 
Method
1. Sift flour and bicarb together
2. Add softened butter, eggs and sugar then whisk for two minutes
3. Stir in the rhubarb
4. Put mix into a large loaf tin, or two small ones
5. Cover with foil
6. Bake at 150C between three-quarters- of-an-hour and one-and-a-quarter hours (depending on size of tin)
7. Cool and dust with icing sugar
before serving
