Cod and watercress parcels - recipe

Ingredients (Serves 4)

• 250g cod

• 85g watercress

• 2 cloves of garlic, peeled

• 1 green chilli, chopped

• 2 slices of Parma ham

• 2 tbsp olive oil

• 1 tbsp balsamic vinegar

• 150g brown rice

• 1 small red onion, diced

• 50g sundried tomatoes,

• 50g black olives, sliced

• Black pepper



• Pile the watercress, chilli and garlic along the top of the cod and wrap in parma ham. Sprinkle with oil and balsamic vinegar and bake for 15 minutes at 180c.

• Simmer the rice until cooked. Sauté the onion, tomato and olives and mix with the rice.

• Spoon the rice mixture onto a plate. Place the remaining watercress on top. Remove the cod from the oven and place on top.
