Owner of the Manor at Sway, Tim Holloway, took over the hotel in 2014. Here he describes what visitors can now expect
Tell us a bit about the history of the hotel. How long has it been running, and when did you take over?
The Manor has been a hotel since 1967 and was known for many years as the White Rose. We took over in January 2014.
Talk about the wider setting, what’s on your doorstep and what will visitors enjoy doing in the area?
The New Forest National Park surrounds us, with horses and ponies wandering freely as well as the pigs in the autumn and a whole host of other wildlife. The coast is just a few miles away and there is much to explore in the local area.
What influenced your dining style decisions? Who chooses the dishes on the menu and what was the idea behind those choices?
We always wanted the food to be imaginative and elegant but with a rustic feel. We believe the service of food should be pleasurable for both the diner and the restaurant.
Tell us about your chef, where are they from, what is their passion and what do they hope to achieve in the future?
Our chef Jamie Hurst has a background working in both London and locally. He aims to bring a creative element to his food and also to develop the Manor’s home grown produce.
Tell us about the interior design, do you follow a theme? Is it laid out in a particular way? What is the general ambience that you wanted to create?
David Bentheim was charged with transforming The Manor and we wanted to create a cosy yet stylish environment to go along with an informal, friendly style of service. A truly modern country house hotel! David’s use of colour and patterns has ensured that while the guests and patrons here can enjoy modern surroundings, it is still completely sympathetic to the building.
Do you have any upcoming events and are you geared up for group bookings?
The Manor is the perfect environment for an exclusive hire event, be it a wedding, family celebration or corporate get together. We specialise in bespoke and exclusive events, tailor making everything to ensure everything runs smoothly on the day.
What sets you apart from other dining establishments?
The Manor benefits from having a stylish and comfortable atmosphere, with a lovely garden to enjoy. Its uniqueness is in its personal approach, where all guests are welcomed as if entering somebody’s home.
What is your signature dish and why?
This has to be our Loin of Venison. Being in the New Forest the quality is magnificent and our chef Jamie cooks it superbly.
Talk us through your wine list, what is your most prized bottle? What is popular? And what do you always recommend?
Our favourite bottle of red is an Amarone from Alpha Zeta in the Veneto, a very full bodied red wine rich with distinct taste. On the white side of things we have a great Vinho Verde for the summer, perfect for sunny evenings on the terrace.
Where do you source your ingredients?
We try to ensure our meat and produce all come from local suppliers wherever possible…and are looking to utilise our gardens to grow our own ingredients too.
